How to Make Butternut Squash Soup Ingredients: 1 butternut squash, peeled and cubed 1 onion, chopped 2 cloves garlic, minced 4 cups vegetable broth 1 teaspoon salt 1/2 teaspoon black pepper 1/4 cup chopped fresh parsley Instructions: 1. In a large pot or Dutch oven over medium heat, add the olive oil. 2. Once the oil is shimmering, add the onion and cook until softened, about 5 minutes. 3. Add the garlic and cook for 1 minute more. 4. Add the butternut squash, vegetable broth, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the squash is tender. 5. Using an immersion blender or food processor, puree the soup until smooth. 6. Stir in the parsley and serve immediately.
