Preheat oven to 375 degrees F (190 degrees C). 2. Line a baking sheet with parchment paper. 3. In a medium bowl, whisk together the flour, baking soda, ginger, cinnamon, and salt. 4. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. 5. Beat in the egg and vanilla extract. 6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. 7. Fold in the crystallized ginger. 8. Drop the dough by rounded tablespoons onto the prepared baking sheet, spacing them about 2 inches apart. 9. Bake for 8-10 minutes, or until the edges are golden brown and the centers are set. 10.
