Strawberry Swiss Roll
Ingredients:
1 cup all-purpose flour
1/2 cup sugar
1/4 cup unsweetened cocoa powder
1/4 teaspoon baking powder
1/4 teaspoon salt
1 egg
1 egg yolk
1 teaspoon vanilla extract
1/4 cup vegetable oil
1 cup strawberry jam
Instructions:
1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking pan.
2. In a medium bowl, whisk together the flour, sugar, cocoa powder, baking powder, and salt.
3. In a large bowl, beat the egg whites until stiff peaks form. Set aside.
4. In a medium bowl, beat the egg yolks, vanilla extract, and oil together until smooth. Add the dry ingredients to the wet ingredients and mix until just combined. Fold in the egg whites.
5. Pour the batter into the prepared pan and bake for 10-12 minutes, or until a toothpick inserted into the center comes out clean.
6. Let the cake cool completely in the pan.
7. To make the filling, spread the strawberry jam over the cooled cake. Roll up the cake from the short end and slice.
