A Tart of Pears and Custard
Pears and custard are a classic combination, and this tart is the perfect way to enjoy them. The buttery crust is filled with a creamy custard and topped with fresh pears, making for a delicious and visually appealing dessert.
Ingredients
For the crust:
1 cup all-purpose flour
1/2 cup sugar
1/4 cup cold butter, cut into small pieces
1 egg yolk
1 tablespoon ice water
For the filling:
1 cup milk
1/2 cup sugar
2 tablespoons cornstarch
1/4 teaspoon salt
2 egg yolks
1 teaspoon vanilla extract
4-5 ripe pears, peeled and sliced
Instructions
1. To make the crust, whisk together the flour, sugar, and butter in a bowl until the mixture resembles coarse crumbs. Add the egg yolk and ice water and mix until the dough just comes together.
2. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
3. Preheat the oven to 375 degrees F (190 degrees C).
4. Roll out the dough on a lightly floured surface and use it to line a 9-inch tart pan with removable bottom. Trim the excess dough and prick the bottom of the tart with a fork.
5. Bake the crust for 15-20 minutes, or until golden brown.
6. To make the filling, whisk together the milk, sugar, cornstarch, and salt in a saucepan over medium heat. Bring to a boil, stirring constantly. Reduce heat to low and simmer for 2-3 minutes, or until thickened.
7. Remove the saucepan from the heat and whisk in the egg yolks one at a time. Stir in the vanilla extract.
8. Pour the filling into the pre-baked tart shell. Arrange the pear slices on top of the filling.
9. Bake the tart for 25-30 minutes, or until the filling is set and the pears are tender.
10. Let the tart cool completely before serving.
