How to Make a Perfect Christmas Cake The holidays are a time for family and friends to come together and celebrate. What better way to do that than with a delicious, homemade cake? Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking pan. 2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. 3. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the milk and vanilla extract. Add the dry ingredients to the wet ingredients alternately with the pecans and cranberries, beginning and ending with the dry ingredients. 4. Pour the batter into the prepared pan and bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely before frosting. Frosting 1 cup (2 sticks) unsalted butter, softened 3 cups powdered sugar 1/2 cup milk 1 teaspoon vanilla extract 1. In a medium bowl, cream together the butter and powdered sugar until light and fluffy. Beat in the milk and vanilla extract until smooth. 2. Spread the frosting over the cooled cake and decorate with additional pecans and cranberries, if desired. Tips For a richer flavor, use a high-quality butter and dark brown sugar. If you don't have time to make your own frosting, you can use a store-bought buttercream frosting. To make the cake more festive, add festive sprinkles or colored sugar to the frosting.
