1. In a large saucepan, combine the sugar, brown sugar, butter, cocoa powder, and milk. Bring to a boil over medium heat, stirring constantly.
2. Reduce heat to low and simmer for 5 minutes, stirring constantly.
3. Remove from heat and stir in the vanilla extract.
4. Pour the mixture into a greased 9x13 inch baking pan.
5. Sprinkle with chopped nuts, if desired.
6. Let cool completely before cutting into squares.
Chocolate fudge can be stored in an airtight container at room temperature for up to 2 weeks.
