How to Make Rice Dumplings
Ingredients:
1 cup of rice
1 cup of water
1 teaspoon of salt
1/2 cup of sugar
1/4 cup of soy sauce
1/4 cup of mirin
1/4 cup of sake
1/4 cup of vegetable oil
1 egg
1 tablespoon of cornstarch
1/2 cup of water
Instructions:
1. In a large bowl, combine the rice, water, and salt. Bring to a boil over high heat, then reduce heat to low and cover. Simmer for 15 minutes, or until all of the water has been absorbed.
2. While the rice is cooking, make the filling. In a medium bowl, combine the pork, shrimp, mushrooms, carrots, and onions. Season with salt and pepper to taste.
3. Once the rice is cooked, let it cool for a few minutes before transferring it to a large bowl. Add the filling and mix well.
4. To make the dumplings, take a small handful of the rice mixture and form it into a ball. Dip your finger in the cornstarch water and moisten the edges of the ball. Then, flatten the ball into a disc and place a small piece of the filling in the center. Fold the edges of the disc over the filling and pinch to seal.
5. Repeat steps 4 and 5 until you have used up all of the rice mixture.
6. Heat the oil in a large skillet over medium heat. Once the oil is hot, add the dumplings and cook for 3-4 minutes per side, or until they are golden brown and cooked through.
7. Serve the dumplings immediately with dipping sauce.
