Soup with Tender Noodles, Fresh Veggies, and Turkey
This soup is a quick and easy way to get a healthy meal on the table. It's full of tender noodles, fresh vegetables, and tender turkey, and it can be on your table in just 35 minutes.
Ingredients:
1 pound of boneless, skinless turkey breast, cut into 1-inch pieces
1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, minced
2 carrots, peeled and chopped
1 celery stalk, chopped
1 (15 ounce) can of black beans, rinsed and drained
1 (15 ounce) can of corn, drained
1 (10 ounce) can of diced tomatoes with green chilies, undrained
1 (10 ounce) package of frozen mixed vegetables
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup of chicken broth
1/2 cup of water
1/4 cup of fresh parsley, chopped
Instructions:
1. In a large pot or Dutch oven over medium heat, heat the olive oil.
2. Add the turkey and cook until browned on all sides.
3. Add the onion, garlic, carrots, and celery and cook until softened.
4. Stir in the black beans, corn, tomatoes, mixed vegetables, oregano, basil, salt, and pepper.
5. Bring to a boil, then reduce heat and simmer for 15 minutes.
6. Stir in the chicken broth and water and bring to a boil.
7. Reduce heat and simmer for 10 minutes, or until the vegetables are tender.
8. Stir in the parsley and serve immediately.
