1. Preheat oven to 350 degrees F (175 degrees C). 2. In a medium bowl, whisk together the sugar, cornstarch, and salt. 3. In a saucepan over medium heat, bring the milk and cream to a simmer. 4. Slowly whisk the hot milk mixture into the dry ingredients until smooth. 5. Bring the mixture to a boil, stirring constantly. 6. Reduce heat to low and simmer for 2 minutes, stirring constantly. 7. Remove from heat and stir in the vanilla extract. 8. Pour the hot filling into a 9-inch pie plate that has been greased and floured. 9. Arrange the peach slices on top of the filling. 10. Bake for 25-30 minutes, or until the filling is set and the peaches are tender. 11. Let cool completely before serving. Enjoy!
